Tips and Recipes:
Setting the Party Atmosphere

• Use floating candles in wine glasses (filled with water) for an elegant effect.

• Have a chilled welcome drink for your guests. They will most likely be in a partying mood when they arrive and you do not want to dip into your
"party wines" before everyone gets there.

A light dish that would pair nicely with Sauvignon Blanc or Riesling wines is:

Spring Pea Spread on Baguette slices

1 1/2 cups fresh shelled peas or frozen peas (not canned)

1/4 cup extra virgin olive oil

1-2 garlic cloves, minced

1 Tbsp. fresh chopped mint

1 Tbsp. fresh chopped basil (and/or parsley)

Salt & pepper to taste

Parmesan Reggiano cheese, shaved

1 Baguette thinly sliced (1/4" slices)

Cook peas on medium heat for about 3 minutes with just enough
water to cover. Drain and rinse with cold water. Put peas, olive oil, garlic
and mint in food processor. Process until smooth. Add salt and pepper
to taste. Spread on baguette slices. Place parmesan shavings on each
slice. Then sprinkle with basil (or parsley).
